Ingredients


For the filling:

  • 500g ForestFoods Rhubarb - Victoria, chopped into 1-inch pieces

  • 100g granulated sugar

  • 1 tablespoon all-purpose flour

  • 1 teaspoon vanilla extract


For the crumble topping:

  • 150g all-purpose flour

  • 100g light brown sugar

  • 50g rolled oats

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon salt

  • 110g unsalted butter, cold and cut into small cubes


Instructions


  1. Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or non-stick spray.

  2. In a large bowl, combine the chopped rhubarb, granulated sugar, flour, and vanilla extract. Toss until the rhubarb is evenly coated. Transfer the mixture to the prepared baking dish.

  3. In a separate bowl, mix together the flour, brown sugar, rolled oats, ground cinnamon, and salt. Add the cold butter and use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.

  4. Sprinkle the crumble topping evenly over the rhubarb mixture.

  5. Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbly.

  6. Allow the crumble to cool for at least 15 minutes before serving. Enjoy warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
