Ingredients
For the salad:
6 cups Mixed Lettuce (use a combination of your Big 5 Salad Mix, or Duo Mixed Lettuce with Lettuce - Brava)
4 Eggs
1/2 cup thinly sliced Baby Leeks (white and light green parts only)
1/4 cup chopped Curly Parsley
For the Creamy Honey-Mustard Vinaigrette:
1/4 cup olive oil (or vegetable oil)
2 tablespoons apple cider vinegar (or white vinegar)
1 tablespoon honey
1 tablespoon Dijon mustard (or any available mustard)
1 tablespoon mayonnaise
Salt and freshly ground black pepper to taste

Instructions:
Prepare the baby leeks: Thinly slice the white and light green parts of the Baby Leeks.
Hard-boil the eggs: Place the Regenerative Eggs in a saucepan and cover them with cold water. Bring the water to a gentle boil over medium-high heat. Once boiling, immediately turn off the heat, cover the pan, and let the eggs sit for 9-10 minutes. Then, transfer the eggs to a bowl of ice water to cool completely. Peel and quarter or slice the eggs.
Combine ingredients: In a small bowl, whisk together the olive oil (or vegetable oil), apple cider vinegar (or white vinegar), honey, Dijon mustard, and mayonnaise.
Combine greens, leeks, and parsley: In a large salad bowl, gently toss the mixed lettuce, sliced baby leeks, and chopped curly parsley.
Add optional ingredients: If using, add crumbled cheese to the bowl.
Dress the salad: Drizzle the desired amount of creamy honey-mustard vinaigrette over the salad and toss gently to coat everything evenly.
Top with eggs: Arrange the quartered or sliced hard-boiled eggs on top of the salad.
