The Comfort Sandwich Recipe
Ingredients:
5 ForestFoods Regenerative Eggs
4 tbsp mayonnaise
1 tsp Dijon mustard (optional)
A handful of ForestFoods Duo Mixed Lettuce (Michelagio and Claragio lettuces)
8 slices of whole grain or sourdough bread
50g butter, softened
2 packets of cassava crisps or banana crisps (or your preferred alternative)
Salt and freshly ground black or white pepper
Instructions:
1. Prepare the Eggs:
Bring a pot of water to a rolling boil and gently place the eggs into the water. Boil for exactly 6 minutes.
Remove the eggs from the boiling water and transfer them to a bowl of cold water to cool.
2. Make the Egg Mixture:
Once the eggs are cool, peel them and cut them into quarters.
In a bowl, mix the mayonnaise, Dijon mustard (if using), salt, pepper, and finely chopped ForestFoods Duo Mixed Lettuce. Add the eggs and gently mash with a fork until combined but still chunky. The soft yolks will blend into the mayonnaise for a creamy, rich filling.
3. Assemble the Sandwich:
Spread butter on all 8 slices of bread.
Divide the egg mixture evenly across 4 slices of bread, spreading it thickly.
Top with a generous layer of crisps.
Place the remaining slices of bread on top and gently press down to slightly crush the crisps for added crunch.
4. Serve:
Cut in half if desired and serve immediately. This sandwich is best enjoyed fresh, so the crisps remain crunchy.
